Coconut Sticky Rice Balls (makes 16)
Ingredients (makes 16):
Glutinous Rice Flour 1-1/4 cups
Rice Flour 1-1/4 tablespoons
Sugar 1/4 cups
Water 3/4 cups
Oil 1 tablespoon
Coconut Milk 3/4 cups + 2 tablespoons
Unsweetened Shredded Coconut
Optional filling ideas: red bean paste, fresh mango cubes, black sesame paste, crushed peanuts

Method:
Mix glutinous rice flour and rice flour in a large bowl.
Boil water, coconut milk, sugar and oil.
Pour the wet mixture into the flours and mix it into a dough.
Place the dough on a plate and steam for 15 to 20 minutes.
Place the whole plate of steamed dough on an iced water bath for about 30 minutes.
Optional: put on gloves, take a little ball of steamed dough, flatten it, and wrap filling inside.
Place a generous amount of shredded coconut on a separate plate and coat the dough balls fully with the shredded coconut.
