Coconut Sticky Rice Balls (makes 16)

Ingredients (makes 16):

  • Glutinous Rice Flour 1-1/4 cups

  • Rice Flour 1-1/4 tablespoons

  • Sugar 1/4 cups

  • Water 3/4 cups

  • Oil 1 tablespoon

  • Coconut Milk 3/4 cups + 2 tablespoons

  • Unsweetened Shredded Coconut

  • Optional filling ideas: red bean paste, fresh mango cubes, black sesame paste, crushed peanuts

Method:

  • Mix glutinous rice flour and rice flour in a large bowl.

  • Boil water, coconut milk, sugar and oil.

  • Pour the wet mixture into the flours and mix it into a dough.

  • Place the dough on a plate and steam for 15 to 20 minutes.

  • Place the whole plate of steamed dough on an iced water bath for about 30 minutes.

  • Optional: put on gloves, take a little ball of steamed dough, flatten it, and wrap filling inside.

  • Place a generous amount of shredded coconut on a separate plate and coat the dough balls fully with the shredded coconut.
