Chocolate Coffee Yogurt Cupcakes
Ingredients (makes 12):
Dry:
- All purpose flour 1.5 cups
- Sugar 1/2 cup
- Baking powder 2 teaspoons
- Salt 1/4 teaspoon
- Cocoa powder 1/3 cup
- Instant coffee 1 tablespoon
Wet:
- Plain yogurt 1 cup
- Eggs 3
- Vanilla extract 1 teaspoon
- Oil 1/4 cup or 4 tablespoons
Tools:
Flour Sifter
Method:
Preheat oven to 350F.
Mix dry ingredients together; mix wet ingredients together separately.
Mix wet into dry.
Divide batter into paper cups until 3/4 full.
Bake at 350F for 20 minutes.
Cool on wire rack.
