Butter Cookies
Ingredients (makes 36):
Butter 3/4 cup (12 tablespoons)
Sugar 1/3 cup
Egg yolks 2
Vanilla extract 1 teaspoon
All purpose flour 1 3/4 cups

Method:
In a stand mixer, cream together butter, sugar, egg yolks, and vanilla extract until fluffy.
Add flour in 3 batches to the butter mixture, mix lightly until they just come together to form a soft dough.
Preheat oven to 375F.
Roll dough into 1 inch balls, place them 1 inch apart on cookie sheets (they don't spread much).
Fill them with jam or peanut butter or any filling, or leave them as is.
Bake for 10-11 minutes until the bottoms are golden brown.
Cool on racks.
