Ingredients (makes about 12):

  • Large eggs 2

  • Brown sugar 90g

  • Oil 120g

  • Milk 70g

  • Sour cream or yogurt 160g

  • Cake flour 200g

  • Baking powder 2 teaspoons

  • Baking soda 1/4 teaspoon

  • Blueberries, frozen or fresh, 100g, coat with cake flour

Tools:

Method:

  • Mix together eggs and sugar

  • Add in oil, mix well

  • Add in milk, mix well

  • Mix in sour cream/yogurt, mix well

  • Sift in dry ingredients (cake flour, baking powder, and baking soda), use a spatula to mix well

  • Add in blueberries, lightly mix well

  • Preheat oven to 350F

  • Divide batter into paper cups

  • Bake at 350F for 30 minutes

  • Cool on rack

  • EAT!!!
