Blueberry Sour Cream or Yogurt Cupcakes
Ingredients (makes about 12):
Large eggs 2
Brown sugar 90g
Oil 120g
Milk 70g
Sour cream or yogurt 160g
Cake flour 200g
Baking powder 2 teaspoons
Baking soda 1/4 teaspoon
Blueberries, frozen or fresh, 100g, coat with cake flour

Method:
Mix together eggs and sugar
Add in oil, mix well
Add in milk, mix well
Mix in sour cream/yogurt, mix well
Sift in dry ingredients (cake flour, baking powder, and baking soda), use a spatula to mix well
Add in blueberries, lightly mix well
Preheat oven to 350F
Divide batter into paper cups
Bake at 350F for 30 minutes
Cool on rack
